Abstract (EN)

In this thesis, bee products, some plants consumed as tea, some berries; was examined in terms of antioxidant, phenolic composition and Nitric Oxide Synthase Inhibition. Especially nowadays, when the interest in nature is increasing day by day, natural products have been studied to be evaluated together. Antioxidant activity determinations were made by DDPH, FRAP and Total Phenolic Matter analyzes. As a result of the analyzes, it was found that the antioxidant properties of propolis, rhododendron flower, camellia sinensis tea and chestnut flower were high. As a result of phenolic component analysis performed by HPLC, major component was determined differently in all samples. The presence of high levels of different phenolic components in linden and scented grape samples are a distinctive feature from the other samples. While the sample containing the most phenolic component was the chestnut flower, the sample containing the least type of phenolic component was the basil plant. In addition, while the most detected phenolic component in all samples was protocate chuic acid, the least observed component was catechin. Enzyme inhibition of extracts and standard components were studied using the NOS kit. While catechin, one of the components used as a standard, showed the best inhibition effect, it was seen that the mad honey sample number 3 among the samples decreased the activity the most with 0.42 mU/mg value.
