The determination of fatty acid compositions and some bioactive components of poppy (Papaver somniferum L.) seeds with different colors

Abstract (EN)

In this study, were used six poppy seed varieties (Ofis 95, Ofis 96, Ofis 3, Ofis 8, TMO-T ve TMO-1) with different colors (white, yellow, grey). Some general physical and chemical properties (moisture (%), oil content, % ash, weight of 1000 seeds and iodine value), fatty acid composition, total phenolic compound amount, antioxidant activity, E vitamin (α-tocopherol) and color analyses were made in the poppy seed varieties and its seed oils. Total phenolic compound amount according to Folin-Ciocalteau method, antioxidant activitiy according to DPPH method and color according to CIE-L*a*b* method were analysed. The major fatty acids in poppy seed oils were determined linoleic acid asit (65,52 % (TMO-T) - 74,97 % (Ofis 96)), oleic acid (13,26 % (Ofis 96) - 21,43 % (TMO-T)) and palmitic acid (8,65 % (Ofis 95) - 10,06 % (TMO-T)). Total phenolic compound amounts vary between 2,617 (TMO-T) - 2,916 (Ofis 96) (GAE mg/mL), antioxidant activity values vary between 56,50 % (TMO-1) - 87,30 % (Ofis 96) and E vitamin (α-tocopherol) contents vary between 29,4 (TMO-T) - 54,0 (Ofis 95) (mg/kg oil) were determined in the poppy seed oils. L* , a* , b* values of poppy seed oils ranged from 62,57 (TMO-T) to 67,03 (Ofis 96) (bright); from -1,34 (Ofis 95) to -3,24 (Ofis 3) (green); from 5,51 (Ofis 95) to 17,89 (TMO-T) (yellow), respectively. L* , a* , b* values of poppy seeds ranged from 27,92 (Ofis 3) to 70,46 (Ofis 8); from 0,91 (TMO-T) to 8,65 (TMO-1) (red); from -0,01 (TMO-T) to 27,25 (Ofis 95) (yellow), respectively. Linoleic and stearic acid were found to be higher in yellow-colored poppy seed oils, conversely oleic and palmitic acid in grey-colored ones. % oil content and total polyunsaturated fatty acid (Ʃ PUFA) content in yellow-colored poppy seed oils and total phenolic compound amount and antioxidant activity in white-colored poppy seed oils were determined to be higher than other-colored poppy seed oils.
