Abstract (EN)

Rosa canina L (rosehip) is a medicinal plant, frequently using in traditional medicine. Its antioxidant, antimicrobial and anti-inflammatory properties have been demonstrated. Amounts of phenolic compounds and vitamin C depends on various storage temperatures and periods. We aimed to determine the changes in antioxidant, antimicrobial activity and vitamin C content of rosehip fruits collected from Gumushane according to different infusion times and storage conditions. The antioxidant activity, total phenolic content and total flavonoid substance amounts were determined by ABTS, DPPH FRAP methods in the samples taken at 30, 60, 90, 120 minutes and 5th and 6th hours after the fresh, dried and frozen samples were infused at 90 centigrade degree for three months. Phenolic content and vitamin C analysis were determined by HPLC. The analyzes were carried out in these samples by making aqueous and ethanolic extracts of dried fruits. The highest antioxidant activity observed in the infusion products in dried rosehip samples at 6th hour comparied with TFC and flavonoid content (p<0.05). It was observed depending on the storage time the highest amount of vitamin C among the samples was in dried rosehip (83.56 µg/mL). Eight phenolic compounds were detected in extracts by HPLC analysis. The catechin was highest compund (661.42 µg/g extract), vitamin C values decreased by 26% and 14%, respectively in extracts. Antimicrobial activity was observed against five of the 7 strains (B. subtilis, S. aureus, S.s pyogenes E. coli, P. aeruginosa). Recently, appropriate infusion time and storage forms of rosehip fruits will contribute to increasing the yield
