Abstract (EN)
Moldy cheese is liked and consumed frequently in Konya Region. Moldy cheese is a type of a cheese which is produced in Altınekin and Cihanbeyli sections. Majority of the production take place in villages under unhygenic conditions with primitive instruments and equipments. Moulds on the food increase rapidly under proper environmental conditrions and degrade the quality of the food. Moulds, in the advance stage of the reproduction, cause economic damage by turning food in waste. Some moulds leave some metabolites called mycotoxin and is harmful to public health. Aflatoxin is a type of mycotoxin formed by Aspergillus spp.In this study, 25 moldy cheese samples collected from markets and counties in Konya region is examined from the perspective of aflatoxin M1 presence. Aflotoxin M1 presence examination is conducted by using HPLC device. Aflatoxin M1 presence had not been detected in any of the 25 samples examined at the end of this study.
