Abstract (EN)

Honey is a unique and miraculous nutrient used both for medical purposes and as food since ancient times. Turkey has a unique value in terms of honey production potential due to its incomparable plant diversity. Apitherapy value of honey for human health were known 4000 years ago in Anatolia. Today, honey is still a good source of healing, but is seen as more preferable for several reasons some honey. Scientific research has revealed that dark colored honey is more valuable than light colored floral honey. Although antioxidants and various biologically active properties of heater honey (Erica spp. or Calluna spp.) well known in central European countries, scientific studies are insufficient in our country. The aim of this thesis find out chemical characterization and bioactive potential of heater honey in Turkey. Collected from the Muğla region monofloral of heater honey physical parameters (humidity, Brix°, color, optical rotation, conductivity, pH); chemical parameters (sugar content, proline, diastase, HMF) and bioactive properties (total phenolic, total flavonoids, total tannins, antiradical, antioxidant capacity antibacterial activity) were studied.
