Optimization of ultrasound assisted nitrite/nitrate extraction in soudjouks and determination by HPLC

Abstract (EN)

In this study, the method procedure used for the quantification of nitrite and nitrate additives in soudjouk and heat-treated soudjouk by high-performance liquid chromatography was optimized by ultrasound-assisted extraction. With the optimized method, soudjouk and heat-treated soudjouk known to be free of preservatives were enriched with nitrite and nitrate, validation and measurement uncertainty studies were carried out. In validation, selectivity/specificity, limit of detection, limit of quantification, range/linearity, repeatability, reproducibility, recovery and robustness/ruggedness parameters were studied. As a result of the validation and measurement uncertainty studies; The limit of quantification was 7 ppm for nitrite and 12 ppm for nitrate, the recovery rate was 88.03% for nitrite and 89.45% for nitrate, and the expanded uncertainty results were 0.20 for both. Analysis results obtained as a result of validation were compared with statistical tests and evaluated as appropriate.
