Abstract (EN)

Determination of some elements in butter produced/consumed in the vicinity of Trabzon by atomic absorption spectrometry (AAS) and inductively coupled plasma-optical emission spectrometry (ICP-OES)Concentrations of some mineral and trace elements (Na, K, Ca, Mg, Ba, Fe, Cu, Mn, Zn, Se, Co, Al, Cd ve Cr) in butter samples collected from the vicinity of Trabzon were determined using flame atomic absorption spectrometry (FAAS) and inductively coupled plasma optical emission spectrometry (ICP-OES) after microwave digestion. The order of levels of the elements in the samples was determined to be Na > Ca > K > Mg > Fe > Zn > Al > Se > Ba > Cu > Cr > Mn > Co. The concentration ranges in the samples were found to be 80-9830, 23-476, 85-1703, 8,7-37,4, 0,06-0,81, 0,33-19,59, 0,16-1,93, 0,08-0,31, 0,20-4,73, 2,65-4,35, 0,013-0,094, 0,56-10,76, 0,24-4,56 mg kg?1 for sodium, potassium, calcium, magnesium, barium, iron, copper, manganese, zinc, selenium, cobalt, aluminum and chromium, respectively. Although the most results agreed with the literature, especially high concentrations of aluminum were observed in some butter samples. Statistical ANOVA test revealed that there is no significant difference between public and reference butter. By the cluster analysis, Düzköy butter samples were determined to be different than other regions.Key Words: Butter, Mineral and trace element, FAAS, ICP-OES, ANOVA Analysis,Cluster Analysis
