Abstract (EN)
In this study, a questionnaire consisting of 35 questions was applied to 410 students randomly selected from four different faculties (Engineering Faculty, Faculty of Theology, Faculty of Economics and Administrative Sciences and Faculty of Education) of Bayburt University in order to determine consumption habits of milk and dairy products. Individuals participating in the study were selected from senior students of the faculties. The results obtained from the questionnaire were statistically analyzed on the basis of faculty and sex change. As a result of the research; 73.4% of the students who participated in the survey had preferred home-made foods and 74.9% were affected by the packaging while buying food (p<0.01). 83.7% of the university students stated that they found the food controls in our country insufficient (p<0.01). 71.1% of the students who participated in the survey are affected by the product brand while consuming milk and dairy products. All of the girls (100%) stated that feeding was among the factors affecting health and 17,9% of the men stated that nutrition had no effect on health. While 66,3% of female participants prefer pasteurized and 33.2% open milk (street milk) consumption, the primary preference of male participants was sterilized/UHT milk (61.1%). Considering the preference of dairy products, it was found out that female students prefer yoghurt (%70.5) and male students prefer cheese consumption (%62.6). In addition, it was determined that the girls who participated in the survey preferred glass packaging and male students preferred cardboard boxes (p<0.01). When examining the data on the basis of the faculty, it was seen that the students of the Faculty of Engineering always regarded the label information as important (41.1%), while the students of the Faculty of Economics and Administrative Sciences acted as price oriented (%43.0). The findings of the survey will provide data for the milk and dairy products industry, an important branch of the food industry. It also revealed that almost every faculty in universities needs to be informed about many aspects, such as the health benefits of processed foods, milk and products and the points to note when buying these products in the curriculum. It is believed that this study will contribute to the literature as there is no survey work in this area within Bayburt province.
