Determination of gastronomy route in Gaziantep traditional urban texture and gast (Ro)ta proposal

The interpretation of nutrition, which is one of the most basic needs of the with culture, teenique, science and human factor has enabled the formation of gastronomy of cities ad countries. Cities and countries famous for their gastronomy attract tourists frım many different parts of the world. Tourists who come to the region for gastronomic tourism experience not only the cuisine, but also the history, urban texture, architerture and social life and arquire many different experiences to trouler them to the society in which they live. Gastronomy is one of the most effective ways of transterring intergenerational culture is society. It can not be denied that gastronomy is formed and developed in housing in social life. In this context, ıt ıs concluded that the importance of traditional Antep houses should be included in gastronomic tourism and high-scale plans should be made with the traditional texture in mind. Gaziantep gastronomy development and clape process is examined by literature rewiew, clage and observation in the field, and bilateral interviews with related people. The gastronomy registared cities were examised by UNESCO, and the policies developed by Gaziantep local goverment were examised in the light of the projects they implemented and projects were transferred. A survey study was centucted to reweal the charm element of Gaziantep gastronomy tourism and the most popular places were determined with the help of the data obtained. The acrhitectural featurel of the identified places were examined and their plans were drawn. The aim of the study is to adress the issue in the urban context. As a result of the findings, the gastronomy places were seen from the upperscale and interconnecting axis was formed. It is called 'gastrota' as an axle which is farmed for the purpose of being original and bringing it to daily life. The findings of the questionnare concluded that the word gastrota can be easily insested into the language. It is though that 'gastrota' which is prepared Gaziantep's current map will help to find city easily.
