Abstract (EN)

Lactic acid bacteria (LAB) is a commercial microorganism group that plays a major role in the formation of fermented products, including many probiotic species. In recent years, many types of LABs have attracted attention in terms of various qualities besides producing probiotic and fermented products. One of these qualities is the ability to biosorb heavy metals. Heavy metals are very important because they cause environmental pollution and food poisoning. LAB types can retain heavy metals away from food and other media due to their different surface properties. For this reason, 2 main stages were carried out in this project: In the first stage, LAB species from pickle samples produced under natural conditions were isolated and these species were identified. In the second stage, the ability of these species to biosorb Cd2+, Co2+, Ni2+, Pb2+ and Zn2+ heavy metal ions was investigated. According to the results, all LAB species showed high biosorption interest against Cd2+, Co2+, Ni2+ and Zn2+ ions, in addition some strains showed high interest in Pb2+ ions. However, some species showed low affinity for Pb2+ ions. As a result, it was concluded that LAB species isolated from pickle samples can remove heavy metals present in foods with high performance.
