The determination of some heavy metal and selenium concentration in eggs collected from different region of Gi̇resun

Abstract (EN)

This study was initiated in Feburary 2013 to determine the amount of heavy metal in eggs collected from arround of Giresun. Study has been carried out for 12 months and designated as seasonal samples were collected from six stations. Also sample was taken from eggs sold in supermarket. Study was designated as seasonal and samples were seperated egg yolks and whites (albumen). Analysis of ten elements including Cu, Cr, Pb, Zn, Co, Mn, Fe, Ni, As and Se was determined in all samples. In this study regardless of differences between stations and seasons, heavy metal levels of egg yolks was determined Cr:0.969, Mn:0.960, Fe:48.775, Co:0.007, Ni:0.284, Cu:1.715, Zn:23.831, As:0.785, Pb:0.527, Se:1.362. Also regardless of differences between stations and seasons, heavy metal levels of albumen (egg white) was determined Cr:2.841, Mn:1.252, Fe:43.834, Co:0.000, Ni:1.294, Cu:4.236, Zn:22.403, As:3.781, Pb:2.919, Se:1.786. It was not found that statistically significant difference among stations (p>0.05) but, it was found that statistically significant difference in terms of seasons (p<0.05).
