Abstract (EN)
In this study, the mineral contents of 6 homemade molasses obtained from Giresun region were determined by Ion Chromatography (IC) and Inductive Coupled Plasma Mass Spectrometry (ICP-MS). The studied molasses are taflan, kiwi, pear, black grape, white grape and apple molasses. Some common anions (fluoride, chloride, nitrite, bromide, nitrate, phosphate and sulfate) and cations (lithium, sodium, ammonium, potassium, magnesium and calcium) were determined by ion chromatography. The amounts of lithium, sodium, magnesium, aluminum, calcium, chromium, iron, copper and zinc were determined by ICP-MS. As a result of this data, when the mineral content of molasses were evaluated, the highest amount of potassium (K), calcium (Ca), magnesium (Mg) and sodium (Na) were determined in ion chromatography respectively. According to the ICP-MS, the highest amount of calcium (Ca), magnesium (Mg), sodium (Na), aluminum (Al), iron (Fe) and copper (Cu) were determined respectively.
