Determination of chemical and antimicrobial properties of peel and pulp fractions of jujube fruit (Zizyphus jujuba Mill.)

Abstract (EN)

Within the scope of this study, chemical and physical analysis including the determination of carbohydrate, protein, fat, moisture and ash of the peel and pulp fractions of jujube (Zizyphus jujuba Mill.) fruit obtained from Aksaray province and its antimicrobial effect were determined by using test microorganisms in vitro. For this purpose, jujube peel and pulp fractions were extracted by ultrasound method. The extracts obtained were subjected to disc diffusion method with reference to L.monocytogenes ATCC 13932, E.coli ATCC 25922, Enterecoccus faecalis ATCC 51559, Staphylococcus aureus ATCC 43300, Bacillus cereus ATCC 14579, E.coli O157:H7 KHEN 1461, Klebsiella pneumoniae ATCC 13883 and Salmonella subsp. enterica serovar Abony BA 2162 microorganism strains for antimicrobial detection. It was subjected to disk diffusion method with reference to it. Research findings showed that the jujube peel and pulp fractions have antimicrobial properties at varying rates. The zone widths of jujube peel fraction against K.pneumoniae ATCC 13883, Salmonella subsp. enterica serovar Abony BA 2162, E.coli O157:H7 KHEN 1461 and E.coli ATCC 25922 strains was determined as 21.67%, 38.52%, 32.58% and 42.69%, respectively. The zone widths of jujube pulp fraction against Staphylococcus aureus ATCC 43300, Klebsiella pneumoniae ATCC 13883, Salmonella subsp. enterica serovar Abony BA 2162, E.coli O157:H7 KHEN 1461 and E.coli ATCC 25922 strains was determined as 16.08%, 19.57%, 45.94%, 40.17%, 31.89%, respectively. Inhibition effect was not detected against gram positive strains of L.monocytogenes ATCC 13932, Enterecoccus faecalis ATCC 51559 and Bacillus cereus ATCC 14579. When the antimicrobial effects were evaluated, the inhibition effect of the jujube peel fraction was observed only against gram negative bacteria. On the other hand, jujube pulp fraction was found to have a higher inhibitory effect on gram negative bacteria compared to gram positive bacteria.
