Abstract (EN)

Black goji berry (Lycium ruthenicum Murr.) is a perennial herb belonging to the Solanaceae family. In this study, it was aimed to determine the total anthocyanin, carotenoid, antioxidant capacity, the total amount of phenolic and flavonoid substances in their content, the amount of oil and fatty acid types of L. ruthenicum fruits cultivated in Bor district of Niğde. In this study, extractions were prepared using water and ethanol. Total phenolic substance amount was determined by the Folin-Ciocalteu method and total flavonoid substance determination was made by spectrophotometric method. DPPH (2,2-Diphenyl-1- Picrylhydrazil), and CUPRAC (Copper (II) Reducing Antioxidant capacity) methods were used to determine the antioxidant capacity. Total anthocyanin and carotenoid amounts were determined spectrophotometrically. Total oil amount was determined as a result of soxhlet extraction, fatty acid diversity, and amount of fruit and seed were determined by the GC-MS method. Our research results demonstrate that the extractions with water have an effective content in terms of total phenolic substance, total flavonoid substance, and total antioxidant capacity. Aqueous extractions have also been found to contain high amounts of anthocyanins. The amount of carotenoids in the fruit was quite low. 19,5 mg/g oil in fruit extract and 69,25 mg/g oil in seed extract were determined. 21 different fatty acids were determined in GC-MS analysis. Among them, the highest amount of Linolelaidic acid (%75,18188) in the seed, Oleic acid (%35,85104), and cis-10-Heptadecanoic acid (%33,46331) in the fruit were determined.
