Abstract (EN)

In this study, it was aimed to systematically examine the antioxidant properties of star anise extracts obtained using the NADES method and their effects on enzyme inhibition. In addition, the Trans-anethol substance was determined and used in the study in order to measure the effect of the tests. The study consists of five main titles and subheadings. In the first part, an introduction to the study was made and the variables whose effects were examined in the study were presented within the framework of the relevant field literature. In the second part, the main sources in the field literature examined as the main source for this study are presented. In the third part, the method and materials of the research, the solutions used are presented in the relevant headings. The findings obtained in the fourth part of the research are presented in the form of headings related to tables and graphs. In the fifth part of the research, conclusions and discussions were developed according to the findings obtained. As a result of the research, it was found that the enzyme inhibition and antioxidant reduction forces of Star Anise NADES solutions were higher than some of the standard antioxidants, but compared to all of the other solutions used in the study. The glucose content was found to be higher in the Star Anise solution prepared with NADES. Trans-anethol, on the other hand, has been observed to be lower than both NADES solutions and standards.
