Abstract (EN)
In disasters and emergencies that disrupt the normal flow of life, public health is faced with many risk factors. The most essential factor for the continuity of life is the continuation of nutritional activity. One of the topics that should be given importance in pre-disaster planning should be the protection of nutritional health. In the first hours, functional nutrient-rich foods are delivered to the disaster victims. It is possible to protect public health in extraordinary situations and to meet the needs of individuals in a healthy way; It is planned to produce functional food bar support, which is safe and most importantly, which can be supplied very quickly in cases such as disasters and emergencies.In our study, the antioxidant of red beet produced in our country was investigated with the inclusion of hydrogenated red beet extract from the hydrogen extraction compared to the control group. It is also known that antioxidants have protective and therapeutic effects on public health.There is no other functional nutritional bar supplement study designed for disasters and emergencies using hydrogenated beetroot extract in the literature.
