Abstract (EN)

There are numerous costly, time-consuming and technically demanding analytical techniques for determining the freshness and quality of foods and measuring their color values. With the development of, there is an increasing trend towards low-cost innovative methods that are easily accessible and provide rapid results has increased. The aim of this study was to perform color analysis using a smartphone application to determine the shelf life and freshness of the product. In this context, photographs were taken with a smartphone camera on different types of beef such as sirloin, truffle, egg, souk and shoulder meat. These photographs were taken from a certain height (23-25 cm) and with lamps of different color temperatures (2500K, 4000K and 6500K). The photos taken were cropped to certain sizes and uploaded to the smartphone application. This application measured, L*a*b* color values obtained in the CIE Lab space system were measured. According to the obtained values, freshness information about red meat samples was tried to be obtained. As a result, it has been observed that the color values of red meat can be measured with a smartphone application, which is a fast and low-cost method. Since smartphone applications and camera systems are open to development, it is anticipated that they can be used more effectively in food color measurement.
