Abstract (EN)

In this thesis, the characteristics of Hawthorn vinegar which is widely used in Bolu Province and its counties such as the general compounds, acidity, pH, ? Brix, conductivity, color, viscosity, total anthocyanin content, total antioxidant capacity, total phenolic substance capacity, mineral substance content, FT-IR and DSC analysis with antimicrobial effects were investigated.It is known that more consumed locally Hawthorn vinegar has compounds which have positive effects on cardiovascular system. Total of 37 volunteers were involved in the study and they were asked to consume one spoon of vinegar mixed with half glass of warm water for four weeks and weight change, blood pressure, glucose, urine, creatinine, SGOT, SGPT, cholesterol, LDL, VLDL, triglyceride, glycohemoglobine (HbA1c) and EKG measurement were done, and measurements of any side effects, changes in both eating habits and psychological feelings were observed.It was determined that Hawthorn vinegar has high amount of phenolic substance content and high antioxidant capacity. Moreover, it was concluded that Hawthorn vinegar is very effective lowering sugar, cholesterol and triglyceride level in blood as well as HbA1C. Therefore, the potential use of Hawthorn vinegar in alternative medicine needs to be searched.
