Abstract (EN)

In today's world where intense competition is dominant, researches conducted to determine the consumption phenomenon; habits, desires and demands of consumers gain great importance. The phenomenon of consumption has been an important subject that has attracted the attention of disciplines throughout history due to its sophisticated structure. In the 21st century, it has gained a new dimension in the concept of coffee consumption for our country, causing the European and American style of coffee consumption culture to settle, the opening of new style coffee shops and the emergence of new brands. In the coffee industry (Turkish coffee), it has become important to examine the change of intergenerational coffee consumption habits in order for the producers to continue their existence and to demonstrate their performance in the competitive market. The aim of this study is to examine the coffee consumption habits of X, Y, Z generations, to determine the intergenerational consumption differences and to determine the important factors affecting coffee preferences. The examination of coffee consumption habits of three different generations, X, Y, Z, which forms the basis of the thesis, is a parallel examination with the relationship between age criteria and coffee consumption habits. In the cross-chi-square evaluation of the responses of participants from different generations to their coffee consumption habits, it was determined that there was no significant difference between different ages (generations) and coffee consumption habits or in other words the difference is only (p>0.05). For example, in the form of coffee consumption, 54.5% of all three different generations consume coffee. There was a difference between the coffee consumption habits of participants with different education and marital status, who consumed plain, 38.7% of all three different generations chose the same brand of coffee (Starbucks), 54.8% of all three different generations preferred Turkish coffee. While it was observed that there was no significant relationship (p>0.05), the effect and relationship of working status on coffee consumption habits was more significant than other criteria (p>0.05); When the survey data is examined in general, It is seen that the difference between generations does not affect the coffee consumption habits much.
