Investigation of the effect of fan protection sheet on performance and safety in built-in ovens

Abstract (EN)

This study aims to improve the energy efficiency and cooking performance of home built-in ovens as a solution to the problems of increasing energy costs and environmental pollution. Since the energy consumption of conventional ovens is higher than that of built-in ovens due to their size and cooking time, consumers prefer built-in ovens, especially due to the energy efficiency and time savings provided by the developing technology. Today, built-in ovens allow less energy consumption by cooking more than one at the same time with their multiple cooking features. Factors affecting the cooking performance of built-in ovens include resistance power, fan speed, fan blade design structure and safety standards 60335-1 and 60335-2-6 set by TSE. In this study, the effects of the air distribution inside the oven, temperature curves on the trays and the design of the fan guard on the multiple cooking performance were numerically investigated with a 3D analysis program. Structural improvement of the design was realized with the numerical studies and then experimental studies were carried out. The positive effect of the experimental studies has been numerically demonstrated. Preliminary experimental studies include determination of the temperature distribution inside the oven when the ring heater is operating, baking experiments and determination of boundary conditions to be used in the numerical model. In the numerical analysis, the effect of fan rotation direction and ventilation holes on the analysis were examined. As a result, it was determined that the performance of the built-in oven increased by 3% to 5% when the temperature values taken on the oven trays of the fan protection sheets with 2 different designs were analyzed. In the experimental energy efficiency tests, it was seen that the energy value, which was class A, increased by 6.6% and reached the A + value class with a result close to the numerical analysis data. In the cooking tests carried out in accordance with TSE 60350-1 performance standard, it was observed that the fan protection sheet received 92 points, which is above the standard requirements.
