Abstract (EN)

The Covid-19 outbreak has changed the world order since from the beginning. INot only affected the health systems of countries, but also economies, social values and individuals have been affected separately by the epidemic. Despite the Covid-19 outbreak, countries have taken different precautions, but it has been revealed that in general, the epidemic was caught unprepared.The Covid-19 outbreak has negative effects both socially and economically. The closing of the borders of the countries, travel restrictions and the cancellation of transportation and accommodation reservations brought the service industry to a halt. Restaurants are place that where people visit frequently for dining, socializing and business purposes have been one of the sectors that received the heaviest blow due to the epidemic. The restaurant industry has come to a standstill and many restaurant businesses worldwide have closed or provided limited service to their customers. In this research, the effects of the new Covid-19 disease, also called the Covid-19 pandemic, on the restaurant industry were investigated. In the study, how the Covid-19 epidemic affected the restaurant layout, restaurant supply chain, changing customer behavior and the financial status of the restaurants participating in the research were investigated. At the same time, the short, medium and long-term effects of the epidemic on the restaurant industry were examined. Financial, supply chain and changing consumer habits that affect the sector in the short, medium and long term are among the important findings in the research. The study also includes several strategies that business operators and managers in the industry can adopt to increase resilience in the changing environment during and after the Covid-19 era. This research has been written to contribute to theory and practice. This research was conducted on fine dining restaurants and does not include small-scale and fast-food restaurants.
