Abstract (EN)

Within the scope of this research, to determine the physical and chemical properties of hemp seed oils obtained by cold pressing and socket extraction; dry matter, ash, free fatty acidity, peroxide number, iodine value and saponification number were analyzed. In this direction, cannabis seeds; dry matter, ash, cold pressed and socket extraction oil amounts respectively; It was determined as 95,16%, 4,58%, 26,80%, 37,50%. On the other hand, cold pressed and soxhlet extraction of hemp seed oils, respectively, peroxide number, free fatty acidity respectively; It was determined as 9,16-3,66 meq O2/kg, 2,50%-3,02%. In conclusion; Hemp seed oils are suitable for consumption as human food after their free fatty acidity and peroxide values are reduced if they are desired to be consumed internally. It is determined that it is a good food source in terms of fatty acid composition, sterol composition and mineral substance amount.
