Abstract (EN)

In this thesis, suitable extraction method (convectional and microwave heating Soxhlet, Gerhardt, SFE, NIR), time and quality of soybean oil were determined. Extraction rate is calculated theoretically. It was determined that extraction rate is decreased by increasing particle size.Oil yields were varied between 15.98-17.98% depending on different methods. Major fatty acid component of soybean oil was determined as linoleic acid by GC analysis. Extraction times are varied between 30-480 minutes according to different extraction methods.Oil and moisture contents of soybeans were measured by NIR and found results were in a good agreement with the results obtained by standard methods.
