Abstract (EN)

In recent years, promoting culinary culture and gastronomy in other countries through shared values and nationalist narratives has become an emphasis for many states. During this marketing process, these countries define the unique flavor elements of their traditional products and promote them abroad using various strategies. This study aims to align the flavor factors among countries and draw conclusions about marketing dessert products from Turkish culinary culture in regions identified as part of Turkish geography, informed by the principles of the Gastronationalism movement. To achieve this goal, interviews were conducted with students specializing in gastronomy and culinary arts from countries that maintain friendly relations with Turkey. The research findings, derived from content analysis within a phenomenological framework, indicate that new products should be developed by adapting Turkish desserts, mainly focusing on taste, mouthfeel, and cultural nationalism. This research is significant for understanding the awareness of Turkish desserts in Turkey-friendly nations concerning promotion and flavor characteristics.
