Abstract (EN)
In this study it is aimed to determine the ceremonious food and beverages of Gaziantep city, which has multidimensional cuisine culture, to reveal the differences between people's point of view about the ceremonious food and beverages, to record the city's cuisine culture for the next generations, and to contribute to the literature in this field of study. Population of the research consists of the dwellers of Gaziantep city.Number of the people is 440 takes part in the research. The survey form used in the data collection contains 3 parts. The questionnaire used in the collection of research data consists of 3 parts. Reliability analyzes of the scales used in the research were done by calculating Cronbach's alpha coefficients. In the analysis performed, data from 440 participants were used. Alpha coefficients above 0.7 indicate that the scales are reliable. The analysis of data is being made with the help of the Statistical Package for the Social Sciences. It can be inferred from the results of the study that various foods and similar beverages are made on special days by the dwellers of Gaziantep. Additionally, according to the results the participants attach great importance to foods and beverages made on special days and their missing level of these foods and beverages at medium.
