Abstract (EN)

The genus Amanita is a mixed and interesting mushroom genus because it contains saprophytic and ectomycorrhizal species, as well as deadly poisonous and edible species. It is estimated that there are about 500 species of the genus described and another 500 still undescribed. In this thesis, some physical and chemical properties of macrofungi (Amanita rubescens, A. caesarea, A. citrina, A. franchetii, A. muscaria, A. pantherina, A. phalloides ve A. vittadinii) belonging to the genus Amanita collected from different regions of Turkey and determined by both morphological and molecular characterization were determined. Antioxidant activities of some poisonous Amanita mushrooms were found to be higher than the edible ones. When the moisture contents were examined, the highest moisture content was found in A. rubescens (8.63%) and the lowest in A. phalloides (3.88%). The highest total phenolic compound was found in A. vittadinii, while the lowest was determined in A. muscaria. Antioxidant activities of different Amanita species were investigated by three different methods, and the highest DPPH, ABTS, and FRAP activities were detected in A. pantherina, A. vittadinii and A. rubescens, respectively.
