Abstract (EN)
In this study, an infrared energy dryer is investigated analysis of heat and flow by using Ansys Fluent 13.0(CFD) software. The infrared energy dryer was planned and manufactured. Then all major components of the infrared energy dryer are measured and modeled as accurately as possible. Carried out experimental investigations under different operating boundary conditions. The effect of two drying temperature on infrared drying of stale bread slices were experimented. In order to obtain from the drying behavior of stale bread slices, carried out six drying experimentals under different boundary conditions. Air temperature and air flow velocity that essentially influence in the drying time. In manufactured infrared energy dryer, stale bread slices was dried at air temperature of 40 ?C, 50 ?C and air flow velocity of 1.0 m/s, 0.75 m/s, 0.5 m/s.In the infrared energy dryer, drying air temperature was controlled with proportional. Proportional was controlled infrared lamp that drying air temperature was kept value of setting in the dryer champer. In consequence of drying experimentals, noted all of data under different operating conditions. Those data were used to numerical analysis of heat and flow by ansys Fluent 13.0 (CFD). It was seemed that after doing analysis in the infrared dryer, air distribution in the dryer champer is such an important parameter in the drying.Keywords : Stale bread, drying, dryer, infrared energy
