Abstract (EN)

In this thesis, it was aimed to examine the potential use of deep eutectic liquids (DELs) as new generation extraction solvent and plasticizer in the ultrasound-assisted green extraction of antioxidant phenolic compounds from lavender and the production of pectin-based films. One variable at a time, fractional factorial design, steepest ascent/descent method, and central composite design were used to optimize the extraction conditions. In the film applications, the potential effects of choline chloride: glycerol-based DEL as a plasticizer, DEL extract of lavender as both plasticizer and active ingredient, as well as the addition of lyophilized extract of lavender at different concentrations (0.5%, 1%, and 2%) on the properties of pectin films were evaluated during storage. Furthermore, pectin solutions have been employed as coating material in cooked meatballs, and their effects on lipid oxidation have been evaluated. In conclusion, the results indicate that DEL could be beneficially used to improve the extraction of phenolic compounds and antioxidant packaging technology.
