Abstract (EN)

In this study, the production of manyok samples produced under laboratory conditions, and shelf life, pH, microbiota change, yeasts identified and involved in fermentation Antibiotic resistance properties of LABs were determined. During fermentation,manyok pH measurements, total LAB, Enterococcus, total mesophile aerob bacteria (TMAB), aerobic spore bacteria, total Coliform, Escherichia coli and total yeast counts Respectively. pH values of cassava samples Between 4.08 - 4.90. Total LAB, TMAB, Enterococcus bacteria, total yeast and total Coliform counts respectively 6.16.107 log cfu / g; 4.04-6.33.10 7 log cfu / g; 3.62 - 3.87 log cfu / g; 4.38 to 7.16 log cfu / g and 0 to 1.77 log EMS / g between. No aerobic spore bacteria and Escherichia coli were detected in any sample. To define the total LAB catalase negative and Gram positive properties 19 strain was determined. As a result of Vitek 2 compact analysis Pediococcus strains (30%), Leuconostoc (25%), Enterococcus (40%) and Streptococcus (5%). Yeast strains Candida kefyr (50%), Cryptococcus albidus (10%) and Rhodotorula glutinis (40%) species. Antibiotic resistance of LABs Kirby-Bauer disk diffusion method. According to the results obtained Pediococcus strains, vancomycin (100%), tetracycline (100%), ciprofloxacin (100%) and chloramphenicol (66.67%)rifampicin (100%), gentamicin (100%), ampicillin (66.67%) and erythromycin (66.67%). Leuconostoc strains resistant to vancomycin (100%), ciprofloxacin (100%), gentamicin (60%) and tetracycline (20%) are susceptible to chloramphenicol (100%), rifampicin (60%), ampicillin (80%) and erythromycin (60%). they were determined. Enterococcus strains, gentamicin (87.5%), rifampicin (75%), erythromycin (25%) and ciprofloxacin (50%) resistant, ampicillin (87.5%), vancomycin (75%), chloramphenicol (62.5%) and tetracycline (62.5%).
