The taste of music: Interaction with the senses

In this study, the interaction between the senses is discussed. For this purpose, an in-depth research was conducted on what the interaction between the senses is and how it occurs. The interaction of the senses of hearing and taste with each other was examined in the subject area. By looking at the past studies in this field, many different sources were examined and 2 different music and a meal were determined. The determined music was produced by some researchers for inter-sensory interaction. The main reason for the determination of these music is that it adapts to different tastes and reflects two different tastes. The determined musics are those that are compatible with bitter taste and sweet taste. "Chicken with hot and sweet sauce", which belongs to the Korean culinary culture, was chosen as the dish suitable for the purpose of the experiment. The determination of this dish for tasting is that it contains both bitter and sweet taste. A sensory analysis experiment was planned with the determined music and food. The sensory analysis method was used in the study. Sensory analysis was done in 3 different tastings. The same food was presented to the same tasters in three stages, consisting of two different music concerts and a control group without music. The experiment was applied to a group of 16 trained panelists on May 20, 2022. Data were collected on two scales during the tastings. The first of these scales is about the level of feeling the tastes, and the second is about the food taste. The purpose of this study is to measure whether the taste of a food can be perceived differently with different music. As a result of the statistical analysis, it was concluded that the music associated with the bitter taste obviously increased the feeling of bitterness in the food by manipulating it.
