Determination of physicochemical characteristics and pesticide residue quantities of brine vine leaves of narince

Abstract (EN)
In this study; it was aimed to determine some physicochemical properties, total phenolic content, antioxidant activity and pesticide residue of the pickled vine leaves produced from Narince variety grown in Tokat. Color (L *, a *, b *) pH, total acidity, salt amount (Mohr method), total phenolic content (Folin-Ciocalteu method), antioxidant activity (DPPH and ABTS methods) and pesticide amount (Quechers method) were determined in commercial and traditional pickled vine leaves. pH values of the pickled vine leaves ranged between 3.30-3.83, total acidity ranged between % 0.3-1.72. It has been determined that the salt content of pickled vine leaves varies in a wide range of 10.92- 23.67%. Purified water, 80% ethanol and 70% methanol solvents were used to determine the total phenolic content. Total amounts of phenolic matter in the pickled vine leaves were 0.55-7.81 mg GAE/g 5-15.66 mg GAE/g 5.16-16.85 mg GAE/g for solvents, respectively. The cation radical scavenging activity (ABTS) was 1.87-9.55 mg TE/g for three different solvents, respectively; 2.75-24.85 mg TE/g; It is determined in the range of 3.57-25.05 mg TE/g. The free radical scavenging activity (DPPH) was 2.89 - 8.89 mg TE/g for three different solvents, respectively; 5.46-10.57 mg TE/g; It was detected in the range of 6.33-11.71 mg TE/g. As a result of the pesticide analysis performed on pickled vine leaves, 15 different pesticide active ingredients were determined and 8 pesticides were found to be above the MRL value. The highest amounts of pesticide residues were found to belong to pyraclostrobin, cyhalothrin, and boscalid. As a result of the research, it was determined that the physicochemical properties of Narince variety of pickled vine leaves are suitable for consumption, but the amount of salt in some samples was higher than the specified standard values and the detected residue amounts were at a level that would pose a health risk. 2021, 59 PAGE KEYWORDS: Brine, Vine Leaves, Physicochemical Characteristics, Pesticide Residue
