Abstract (EN)

This thesis investigates how design practices and digital fabrication technologies can be systematically integrated into undergraduate gastronomy education, as well as the impact of such integration on students' creative processes, learning experiences, and professional preparedness. Moving beyond the short-term interventions that dominate the current literature, the research is grounded in a four-semester longitudinal integration implemented within a core gastronomy course. Throughout this process, students produced personalized stencil and mold prototypes for culinary preparation and presentation, and tested these prototypes across different plate configurations. Data were collected through surveys, semi-structured interviews, focus group sessions, studio observations, student artefacts, and reflective documents, and were analyzed using thematic and content analysis methods. The findings demonstrate that sustained engagement with design-oriented workflows enhances students' ideation and prototyping skills. Furthermore, students' use of prototypes across varied plate arrangements and combinations revealed the diversity in their design approaches.The study proposes a multi-semester integration model that outlines pedagogical strategies and scaffolding steps for embedding design practices and digital fabrication technologies into gastronomy education. Overall, the findings show that long-term integration supports students' creative and technical development while providing a sustainable framework that aligns gastronomy education with contemporary industry expectations and emerging digital production cultures.
