Abstract (EN)

In this research, a total of 60 ice cream samples of 3 different varieties (chocolate, strawberry and plain) were provided in 20 different regions of Afyonkarahisar province between 1-31 August 2019. The presence of metal and heavy metal in these samples is intended to be determined by inductive matched plasma (ICP) method. The findings of the research were evaluated by comparing them with the literature. Approximately Aluminum (Al), Copper (Cu) in the ice creams in the research. Chromium (Cr), Lead (Pb), Iron (Fe), Zinc (Zn), Arsenic (As), Manganese (Mn), Cadmium (Cd), Cobalt (Co), Mercury (Hg), Silver (Ag), Selenium (Se) and Mobilden levels are respectively; 149.6 ppm, 7.42 ppm, 33.8 ppm, 334.8 ppm, 0.9 ppm, 32.2 ppm, 124.7 ppm, 0.00 ppm, 0.651 ppm, 0.272 ppm, 0.17 ppm and 2.74 ppm. Although arsenic was determined in ice cream samples, it was found to contain different levels of Al, Cr, Mn, Fe, Co,Cu, Zn,Se, Ag, Cd,Pb. It is understood that some of the values found are higher than those given in the Turkish Food Codex.
