Abstract (EN)

Gümüşhane mulberry pestil, which has been produced in houses for many years, was used as the indispensable food of the winter months and it was sent to the friend as a souvenir. Now the pesticide, which has been started to be produced in more healthy conditions and commercial purposes, has become an important commercial product in 10 - 15 years. Although 23 companies are active in Gümüşhane in this process, production of pesticides is made at home in order to meet the family needs and the number of enterprises is increasing day by day. In this study, it is aimed to determine the nutritional properties of the product obtained by using different flavoring substances and the amount of the cost of the mulberry pestilin production. For this purpose, pestil production was performed by using five different flavors (sunflower seeds, almonds, coconut, peanuts, sesame). Flour, liquid sugar, molasses, milk, condiment, water were used as raw materials. In industrial size, glucose syrup was replaced by invert sugar syrup. Sensory analysis of the obtained products, thickness, content (% m / m), total solids% (m / m), moisture% (m / m), acidity (ssa cin.)% (M / m), pH, HMF (mg / kg), protein% (m / m), total ash% (m / m), 10% HCl insoluble ash% (m / m), total sugar% (m / m), glucose% (m / m), fructose% (m / m), sucrose% (m / m), color, cellulose% (m / m), mineral analyzes (mg / kg), total fat% (m / m) and turkish food codex microbiological analyzes were performed. In addition, the cost calculation was made according to the raw materials used. In the sensory analysis of the obtained pestil, coconut and sesame cases were high in taste and aroma. Food, protein, fat and carbohydrate rates were high. The energy values of the calculated energy values are quite high. Mineral analyzes were found to be rich in terms of content of Na, K, Ca, Fe, Zn, P, Mg and Mn. In addition, elements such as Cu, Mn and Ni have been detected in pestil.
