Applicability of s/Europ carcass gredıng system on cattle and sheep carcasses in Turkey

(107), Charolais (93), Charolais Hybrid. (13), Yerli Kara (13). According to the state of the flesh results are S (4.2%), E + (7.2%), E (26.4%), E- (1.6%), U + (20%), U (28.4% 2.4), R (17%), R- (0.2%), O (3%), O- (%2) and P (1.6%). According to the state of lubrication results are 1 (%0.2), 2- (%2.4), 2 (%5), 2+ (%22.8), 3- (%25), 3 (%19.8), 3+ (%17.8), 4- (%4.4), 4 (%1.8), 4+ (%0.8), 5 (%0.5). The sheep breeds used were Karayaka (59), Karayaka M. (109), Merinos H. (32). According to the state of the flesh results are R+ (%3,5), R (%49), R- (%25), O+ (%3,5), O (%16,5), P (%0,5). According to the state of lubrication results are 2- (%1), 2 (%3), 2+ (%3), 3- (%23), 3 (%22,5),3+ (%24), 4- (%6), 4 (%13), 4+ (%4).
