Abstract (EN)

This study was carried out to search the species determination of minced meats used in ready-to-eat pies,lahmacun and Turkish Pizza which unpackaged so has no label information or sold by a hawker in Aydın province. For this purpose, 90 samples (25 Turkish Pizzas, 35 ready-to-eat pies and 30 lahmacuns) supplied from various point of sales with random sampling at different times. The species determination of minced meats used in ready-to-eat pies, lahmacun and Turkish Pizza have detected by using ELISA technique and type-specific kit. In the study of point of sales in order to offer reasonable prices, low-cost raw materials (minced meat), and hence the search for various types of mixtures or low-cost type of meat, such as the possibility of using horses and pork were evaluated. Analyzed samples identified made from beef meat in accordance with standards and free of fraudulently meat use. Key words: ELISA, species identification, food analysis, mixtures of meat
