The effect of the season on the quality criteria of eggs obtained from chickens with different breeding system in Bayburt

This work; The effect of eggs produced with different breeding techniques (cage system, family type and free-range system) on the external and internal quality of eggs in different seasonal periods (spring, summer, autumn and winter) was investigated. For this purpose, a total of 600 egg samples, 150 of which are in different seasonal processes, from 3 different breeding systems operating in Bayburt province were examined. When examining the seasonal effect of egg external quality analysis; Fracture Strength in winter, Shell thickness, yellow height, yellow index, yellow diameter in spring, shape index in summer, yellow color, haugh unit, breaking strength, shell thickness, shell weight, yolk diameter, shape index in autumn, egg weight While the best results were obtained, yellow color, shell thickness, shell weight, yellow height and yellow diameter had no effect on other data (p<0.05). When evaluated in terms of rearing systems, the best results were obtained in free-range, yellow color cage systems in Shape Index (%) and egg weight (p<0.05). In the internal quality analysis, the yolk part of the egg is high in protein depending on the season, except for the winter period, the best results in terms of rearing systems are obtained in the free-range system (p<0.05), and in terms of beta carotene (µg/g), it is seasonal. In terms of growing systems, it was determined that the best results were obtained in the free-range system (p<0.05). In terms of protein in the white part of the egg, the best results were obtained in the winter season depending on the season, and in the cage system and family businesses in terms of rearing systems (p<0.05). When evaluated in terms of the whole egg, it was determined that the best results in terms of season in terms of ash ratio (%) were in summer, free-range in terms of breeding systems (p<0.05), and the highest summer months in terms of oil % of eggs (p>0.05).
