Determination of microbiological quality of cakes sold in Band surrounding provinces

Abstract (EN)
In this study, a total of 170 samples of chocolate, fruit, plain and such creamed pastries have been used as research material offered for sale in Bolu city center and some districts (Gerede, Yeniçağa, Dörtdivan ve Mudurnu), Zonguldak and Düzce when collected between December 2019 and March 2020. These samples were analyzed in the presence of Escherichia coli, coagulase-positive Staphylococcus, Salmonella spp., and Listeria monocytogenes bacterias in order to determine the microbiological quality and compliance with Turkish Food Codex Regulation on Microbiological Criteria. Analyzes were made according to ISO methods. It was determined that 13,5% of samples Escherichia coli, 11,2% of samples coagulase-positive Staphylococcus, 0,6% of samples Salmonella spp. and 11,8% of samples Listeria monocytogenes when the analysis results are evaluated. These results have shown that the consumption of cake in the region may pose a risk to human health and that more attention should be paid to food safety conditions in the whole process from production to consumption.
