Abstract (EN)
This research was carried out in order to find out what extent people from Artvin living in Bursa keep the Artvin cuisine alive. In the research, the dishes originally belong to Artvin cuisine selected from the food groups consisting of soups, meat dishes, vegetable dishes, fish dishes, herb dishes, pastries and desserts were included and it was tried to reach the result by evaluating the averages obtained by questioning the level of knowing and trying these dishes and the participants from certain age groups. In the study, the frequency distributions of the answers given by the participants about the meals and descriptive statistics were applied, furthermore, it was analyzed via variance tests whether the score formed by scoring the answers and the awareness of food types differed according to demographic characteristics. As a result of the analyzes, it is seen that people from Artvin living in Bursa are familiar with the Artvin cuisine and they keep this culture. According to the findings of the research, the knowledge level of the participants in the older age groups about Artvin cuisine is higher than the lower groups. However, women's average of awareness of the dishes is higher than men, as expected. Consequently, in the research it is seen that the Artvin food culture is continued by the Artvin people living in Bursa with the migration nevertheless, younger generations are a little more unfamiliar with the culture than previous generations.
