Abstract (EN)

The aim of this study is to determine the protein quality of foods in the Türkomp National Food Database and to evaluate them in terms of adult nutrition. Meat products (11 items), dairy products (13 items) and selected other products (5 items) with determined protein and amino acid values in the database were included in this study. PDCAAS method was used in this study to evaluate the protein quality of foods. SPSS 23 program was used for the analysis of the data obtained in the study. In the analyzes made in terms of meat and meat products, the highest protein content was found in Afyon pastrami with 30.63 grams. Most products were evaluated as sufficient sources in terms of essential amino acids and were found to be rich especially in terms of tryptophan (Trp), threonine (Thr), phenylalanine+tyrosine (Phe+Tyr), methionine+cysteine (Met+Cys) and lysine (Lys). In the analyses according to age groups, it was seen that Kayseri sausage had the highest PDCAAS value in all age groups, while Oltu cağ kebab and Bursa döner stood out in terms of BCAA. However, it was determined that the limiting amino acids in adults were generally valine (Val) and Trp, and in children's groups they were Phe+Tyr. In the evaluations made for milk and dairy products, the average protein content was found to be 12.71 grams. It was determined that amino acids such as tryptophan (Trp), isoleucine (Ile), leucine (Leu) and lysine (Lys) were at sufficient levels in adults and children's groups; and Bursa yayık ayran was also determined to be the product with the highest PDCAAS value in all age groups. While the limiting amino acids in adults were methionine+cysteine (Met+Cys) and histidine (His), Phe+Tyr was determined as the limiting amino acid in children's groups. Among other products, the highest protein content was determined in Ankara Beypazarı dry tarhana with 14.38 grams. Ankara Ashura stood out as the product with the highest PDCAAS value and also as having a balanced profile in terms of essential amino acids. In the analyses made according to age groups, it was seen that the limiting amino acids in adults were generally Val and Trp, while in children's groups Phe+Tyr stood out as the limiting amino acids.
