Abstract (EN)
In this study, consumption forms and their food contents of wild plants consumed as a food by native people in and around Düzce were investigated.It was found that in this region there are wild plants belonging to 10 family which consist of 12 taxa. These are Falcaria vulgaris (Sickleweed), Tussilago farfara (Coltsfoot), Trachystemon orientalis (Abraham-Isaac-Jacob), Capsella bursa-pastoris (Shepherd?s purse), Raphanus raphanistrum (Wild radish), Chenopodium album subsp. album var. album (Goosefoot), Vaccinium myrtillus (Bilberry), Mentha longifolia subsp. typhoides var. typhoides (Wild mint), Thymus praecox subsp. skorpilii var. skorpilii (Thyme), Malva neglecta (Mallow), Portulaca oleracea subsp. oleracea (Purslane), Urtica dioica (Nettle). Highest moisture content was determined in Abraham-Isaac-Jacob (% 84,9), lowest one was Wild radish (% 44). Highest organic matter was determined in Bilberry (% 94), lowest one was Purslane (% 76. Highest protein content was found in Wild radish (% 32,26), lowest one was Purslane (% 1,59). Highest fat content was determined in Coltsfoot?s petiole (% 2,33), lowest one was Purslane (% 0,33). Highest cellulose content was evaluated in Thyme (% 28,1), lowest one was Wild radish?s root (% 8,35). Highest tannin content was found in Nettle (229,9 mg. g-1), lowest one was Wild radish?s root (5,32 mg. g-1). Highest antioxidant capacity was found in coltsfoot?s petiole (4,734 mmol TR g-1) and lowest antioxidant capacity was determined in Wild radish?s root (1,004 mmol TR g-1). In all plants which were investigated, highest mineral substance was K and the lowest one was Cu.Keywords: Wild edible plants, Food contents, Düzce
