Abstract (EN)

The objective of this study was to evaluate the consumption patterns, some food quality characteristics (humidity rate, dry matter rate, ash content, organic matter content, protein content), and plant nutrient contents (P, K, Mg, Ca, Fe, Mn, Zn, Na, Al and Cu) of some wild edible plants consumed by local people such as Arum rupicola var. rupicola Boiss., Allium vineale L., Rumex crispus L., Tragopogon reticulatus Boiss. & Huet, Eremurus spectabilis BIEB., Urtica dioica L., Gundelia glabra Mill., Rheum ribes L., Satureja hortensis L., Prangos platychlaena Boiss. Ex. Tchihat subsp. platychloena in Erzincan/Otlukbeli district. Based on the results of this research, the values for the parameters studied in the study were found as 89.01-94.05 % for humidity rate, 6,03-10,77 % for dry matter rate, 6,35-21,36 % for ash content, 80,63-93,65 % for organic matter content, 9,94-35,71 % for protein content, 1123,84-8065,38 ppm for P content, 15974,56-79800,65 ppm for K content, 2146,45-7048,44 ppm for Mg content, 1426,21-11575,28 ppm for Ca content, 142,01-4603,19 ppm for Fe content, 46,33-276,32 ppm for Mn content, 3,14-78,87 ppm for Zn content, 184,39-923,05 ppm for Na content, 313,90-5588,58 ppm for Al content, 2,58-19,49 ppm for Cu content. As a result, it has been obtained that wild edible plants consumed as vegetables show significant differences in their nutrient content and have a richer nutrient content than similar cultivated plants.
