Investigation of rehidration characteristic of apricot dried with different techniques

Abstract (EN)

In this study, rehydration characteristic of Hacihaliloğlu species of apricot, growth in Malatya province, were investigated. For this aim, apricots, dried in different temperature and pre-treatment application were rehydrated in pure water at different temperature and sugar solution at different concentration.Sulfuring with SO2 gases and K2S2O5+ethyl oleate (EO) , K2S2O5, Na2S2O5 +EO, Na2S2O5 solution were applied as pre-treatment. Pure water and 10-20 % glucose and sucrose solution were used as rehydration medium. Suitability of different Models, given in literature, were investigated for modeling rehydration characteristic of apricot. Usability of models were tested with t-test and goodness of model for experimental data were determined with determination coefficient (R2).It was determined that rehydration velocity of apricots, dried in high drying temperature is higher than dried in low temperature and rehydration capacity of apricot, dried without pretreatment, was obtained as higher values than pretreatments. The effect of pretreatment medium on rehydration capacity of apricot are sorted as K2S2O5+EO > K2S2O5 > SO2> Na2S2O5 +EO> Na2S2O5.An increase were obtained in rehydration capacity of apricot with increasing temperature pure water, used as rehydration medium and rehydration with pure water gave better result than sugar solution. Moisture diffusion coefficient of apricot, rehydrated in different rehydration mediums were calculated between in the range of 1,148x10-10 - 3,49x10-10.All of models (Peleg, Weibull and exponential) are suitable for modeling of rehydration characteristic of apricots, rehydrated in different rehydration medium, however, Weibull model were determined as best model for modeling of rehydration characteristic of apricots rehydrated in different rehydration medium.
