Abstract (EN)

Working as a risky business to buy a tested and verified franchise method in food and beverage businesses has different advantages that increase the motivation of entrepreneurs. Unlike other businesses in franchise food and beverage businesses, the product supply is largely provided by the franchisor's main center. As a philosophy that aims to increase profitability and reduce costs in competitive market conditions, the basic element in supply chain management is the description of the supplier, manufacturer, distributor and customer elements that make up the process as a single integrated system. With this perspective, it focuses on the development of management techniques and their compatibility with one another. Determining and measuring accurately of supply chain performance criteria, which is the subject of the thesis, constitutes a unique field of study in the literature for franchise food and beverage businesses. The selection of suppliers in food and beverage businesses and issues such as cost, quality, delivery speed, quantity and flexibility of the supplied products differ by other sectors. The subject of this thesis is the measurement of supply chain performance in franchise food and beverage businesses. Supply chain performance criteria are determined in compliance with the SCOR 12.0 (Supply Chain Organization Reference) model. The objective of the thesis is to measure the supply chain performance in franchise food and beverage businesses and to determine the effect of sustainability, justice and confidence of this performance. Also, it is aimed to provide data for decision makers and practitioners in the thesis. Furthermore, a study analyzing the interaction of the business with the supply chain, trust and order is not included in the literature. In this thesis, partial least squares, structural equation modeling (KEKK-YEM) have been used for data analysis on the effects of these variables on performance criteria and their mediating effects.This analysis technique, which has been used increasingly in recent years, has been preferred by considering a number of issues. With this research, supply chain performance measurement was provided in franchise food and beverage businesses operating in Turkey and the effect of sustainability on performance was measured. In addition, the mediating effects of trust and honesty variables in this effect were determined and effects on supply chain performance measurements reflected to research.
