International research trends in the field of gastronomy and culinary arts: Bibliometric analysis in the articles between 1995 – 2018 in the web of science (Wos) database

In this study, a certain number of articles published in international scientific journals between 1995 and 2015, indexed in international databases with the word "Gastronomy" in their keywords, were analyzed by bibliometric methods. With this aspect, the study aims to determine the contribution to the gastronomy literature in the world. It is expected to perform bibliometric analysis of international publications and to contribute to the development process of Turkish Gastronomy literature. Who are the most productive authors who have published in the field of gastronomy, the status of having multiple authors, where are the institutions of the authors contributing to the journal, the average number of articles published annually by the journals that publish the most in the field of gastronomy, the distribution rates of the articles by years, the average number of bibliographies used in the articles are among the questions ought to be answered is the part. As a result of the research, the fact that there are few studies of this type of Gastronomy, which has been developing rapidly in recent years, is one of the most important reasons for this study. It is thought that the findings to be obtained from bibliometric analyzes will make an important contribution to this branch of science. To reach these publications, the keywords determined to be used while searching the databases were obtained by taking the opinions of the experts and academicians in the field. The general profiles of the institutions or universities that work in this field and direct the development of this science are determined by looking at where they are mainly from and with which institutions they are in cooperation with, by looking at their co-authorship status. The articles in the journals published in the field of Gastronomy and scanned in the Web of Science database between 1995-2018 constitute the universe of the study.
