Abstract (EN)
Identity is a phenomenon that distinguishes societies from each other, gives society its identity and creates the feeling of "we". Cultural identity, which can be considered within the scope of identity, includes traditions, customs, handicrafts and the eating and drinking culture of the society. In this context, the distinctive and distinctive features of each cuisine create its gastronomic identity. In essence, gastronomy identity; It gives the society the opportunity to have a gastronomy that is unique and has become a social symbol over time. When the domestic and foreign literature on gastronomy identity is examined, although the first studies were not done very recently, the relationship between gastronomy and identity has started to become a subject of increasing interest in the domestic literature today. Academic studies on the subject have discussed themes such as what gastronomy identity is and which elements can form gastronomy identity, but a comprehensive and practical method with clear boundaries has not been put forward. Most of these studies are complementary to each other and are continuations of each other, rather than presenting anything new. The first conceptual model on the subject was put forward by Harrington. The researcher tried to explain the elements that make up the gastronomy identity with a conceptual model, but no practical study was carried out. With this study, a model that includes detailed, comprehensive and practical gastronomy identity elements has been developed.
