Vegan, vegetarian, pescatarian local food in the scope of gastronomy tourism of Turkey

Abstract (EN)

Food has been among the important issues in people's social life throughout history. Food is a reflection of eating habits, history and people. At the same, eating is one of the physiological needs required to maintain human life. Recently, food has turned into a good time and joy by tasting different tastes as well as a physiological need for people. It took shape over time and became the main element of travel. Food, which is effective in individuals' travel planning, has been made an integral part of tourism. Food brings together tourism and gastronomy tourism alternative types of tourism all over the world, including Turkey. One of the best ways to experience the culture of food, gastronomic tourism is a growing travel trend. Food that has become an important part of tourism. In this context, gastronomiy tourism has become interesting and important for tourists in recent years. However, gastronomy, which has become an important part of tourism, offers different opportunities for individuals. Tremendous food with a history and offering different dining opportunities in every region of Turkey is one of the countries with unique local flavors. Considered as a part of an important type of tourism, gastronomy tourism in the development of tourism in Turkey it is necessary to introduce regional delicacies. There are local food alternatives for people with special dietary preferences, offering gastronomy opportunities that offer different opportunities for individuals. Vegans, vegetarians and pessaries who have special dietary preferences also want to get to know different cultures and to experience local dishes suitable for their own dietary preferences. This study examined regional dishes in 81 provinces in Turkey to the removal of specific inventory for people who prefer to eat. On that note, the document review technique, which is one of the qualitative research methods, was used. Culture and Tourism Ministry, the Governor, Turkey Culture Portal and other official institutions and published by experts and organizations have benefited from secondary sources. All seven provinces of Turkey were subjected to evaluation all be handled separately based on regional dishes. All local foods owned by 81 provinces that can be accessed within the scope of the research are classified for vegan, vegetarian and pessary people and listed on the basis of regions and provinces. In this context, an inventory has been prepared to guide individuals with vegan, vegetarian and pessary eating habits about the local foods suitable for them, what they can eat in which province, what destinations should do to develop gastronomy tourism and individuals with special eating habits and what stakeholders can do in this regard have been discussed and recommendations presented.
