Abstract (EN)
Pestil and kome are foods unique to Gümüşhane which have been prepared and consumed at homes and offered relative and neighbors for decades and have high nutritional values. Along with the developing technology in the last 15-20 years, the fabricated production in big enterprises enabled new tastes and recipes of pestil to be manufactured. As a result of the R&D studies conducted by large-scale companies, consumers have met new tastes and flavors. Triangle-shaped kome, pestil rolls, honey rolls, pestil with coconut and chocolate, pestil with hazelnut and chocolate and kome with hazelnut are the leading examples of these new tastes. In this study we endeavored to determine sensory, microbiological, physical and chemical properties to be determined according to the selected parameters. For this purpose, we took samples of these six different foods from six companies and we performed sensory analysis and analysis regarding total solid matter % (m/m), Moisture % (m/m), Acidity (SSA cin.) % (m/m), pH, HMF (mg/kg), Protein % (m/m), Fat % (m/m), Total cinder % (m/m), Glycose % (m/m), Fructose % (m/m), Sucrose % (m/m) contents and mineral analysis (mg/kg). The result of the study made clear that a production standard should be specified for these foods as each sample of the same food taken from different companies had different features. As a result of microbiological reproduction took place in some samples, it was detected that companies should reassess their personal and corporate hygiene and quality procedures. Results of the analysis showed that these foods are rich in proteins, fat and carbohydrates. As a result of mineral analysis, it was found out that these foods are also quite rich in Na, K, Ca, Fe, Zn and Mn elements, and some samples contains Cu and Cd elements.
