Abstract (EN)

This study addresses the analysis and evaluation of the distribution registers of the Istanbul Peksimet Eminliği spanning the years 1627-1829. The study comprises an introduction, three main chapters, a conclusion, and appendices. In the introduction, the purpose of the study, its significance, scope, limitations, and methodology are elaborately explained. The first chapter examines the topics of peksimet and peksimet-making in the Ottoman Empire from every angle, in accordance with state policies. The second chapter focuses on the raw materials and expense items used in peksimet production, discussing essential components such as wheat, flour, and wood, and analyzing the efficiency of peksimethanes (bakeries dedicated to peksimet production). The final chapter, the third, covers the distribution and transportation of the produced peksimet, detailing its allocation to the navy, soldiers, fortresses, and allied states, as well as its transportation by sea and land. The study concludes with a general evaluation and includes appendices with relevant tables and documents.
