Abstract (EN)

Comparison of the Nutrient Levels of Rainbow Trout (Oncorhynchus mykiss, Walbaum 1792) Farmed and Caught from Pertek Keban Dam Lake Region In this study, fatty acids, cholesterol, fat soluble vitamins (A, D, E and K vitamins) and aminoacid levels were compared in muscle and liver of rainbow trout (Oncorhynchus mykiss) caught from wild and farmed in Keban Dam Lake Pertek Region. A total of 120 rainbow trout, with an average weight of 356.01±12.03 g and an average total height of 30.88±2.06 cm, were used. Tissue samples were taken from muscle and liver for chemical analyzes. Oleic acid was the dominant mono unsaturated fatty acids (MUFA). The differences in the wild and cage levels of oleic acid in muscle was insignificant (P>0.05). The differences in the wild and cage levels of oleic acid in liver was significant (P<0.05) in May and June. The dominant poly unsaturated fatty acids (PUFA) was docosahexaenoic acids. The differences in the wild and cage levels of docosahexaenoic acid (DHA) in muscle was insignificant (P>0.05). The differences in the wild and cage levels of docosahexaenoic acid in liver was significant (P<0.05) in May. Vitamin E is the highest value among vitamins in terms of fat soluble vitamins. The differences in the wild and cage levels of vitamin E in muscle was significant (P<0.05) in May. The differences in the wild and cage levels of vitamin E in liver was significant (P<0.05) in April. Glycine was the highest value among aminoacids. The differences in the wild and cage levels of glycine in muscle and liver was significant (P<0.01). As a result of this research, it was found that ΣMUFA, eicosapentaenoic acid (EPA) and DHA contents of the trout in wild were higher than farmed fish; ΣPUFA, D and K vitamins, and essential amino acid content were lower.
